Sid is the most awarded cheesemaker on the planet…a fine artist whose medium is cheese. He is the fourth generation that’s rocking out with the amazing milk and terroir from the green rolling hills and glacier action in his pristine part of the world. Some call him “The Jimi Hendrix of Cheese”.

Sid developed a cheese that is a thrilling pairing with Frescobaldi Nipozzano Chianti Rufina Riserva DOCG. This cheese is Applewood Smoked Cheddar. Sid takes his white cheddar then applewood smokes it and finishes it off by hand rubbing it with paprika. The light and kind of sweet smoky flavor really brings out the complexity of the Nipozzano Chianti Rufina Riserva. This cheese won 1st place in its category at the 2005 American Cheese Society Competition.
