Steamed codfish served with cannellini beans and Laudemio olive oil
Recommended wine pairing: Castiglioni Rosato Toscana, IGT
6 fillets of steamed codfish
4 1/4 cups of milk
1 1/3 lb of fresh cannelloni beans
Extra virgin oil (laudemio)
Take the steamed codfish and cut into threads, boil in milk, pepper, salt and oil for 10minutes. Boil the beans with garlic cloves, rosemary, sage, adding the tomatoes and more salt and pepper, continue to cook for 40 minutes. Once cooked, drain.
