Veal steak, cut in a 2.2 pounds or more sirloin
salt and pepper
Prepare a good charcoal possibly with olive wood in order to have a strong base but with no flame.
Put a grill over it, about 4 inches from the charcoal. When the grill is scalding, place the unwashed steak (at room temperature) on it with your hands. Do not add salt and cook for about 6 minutes. Then turn it over (don’t turn with a fork), salt the cooked surface and keep it on the grill for 6 minutes.
Turn again, add salt even on the cooked side, place on a wood chopping board and taste it after one minute. Add ground pepper at your discretion.
