Just as pasta is the traditional Italian dish, the tomato is most often associated with Italian vegetables. The tomato vine does grow profusely throughout this boot-shaped country, but so do a number of other delicious legumes, such as peppers and eggplant. Beans are also a staple as a side or mixed with vegetables and meat.
